Eat Like A Local: Greek Fried Courgettes And Tzatziki

If you've been lucky enough to book a place on our popular Crete & Santorini tour, you'll probably have enjoyed several plates of delicious fried courgettes - or kolokythakia tiganita. Served with a refreshing tzatziki or sometimes a creamy tomato sauce, these traditional snacks can be found in most tavernas throughout both Santorini and Crete. Why not whip up a batch and serve at your next gathering?

Ingredients

  • 1 courgette
  • 1/2 cup of flour
  • 1/2 tsp salt
  • Sprinkle of black pepper
  • 8oz carbonated water
  • Oil for frying

Method

Slice the courgettes into thin rounds and pat dry with a paper towel to remove excess moisture. In a bowl, combine your dry ingredients and then add in the carbonated water until a batter forms. Heat your oil in a pan and then dip each courgette round into the batter, placing them carefully into the hot oil. Fry for around two minutes per side (or until golden brown). Remove from the oil once cooked, sprinkle with salt and enjoy.

Let's make some tzatziki!

  • 1/2 a cucumber
  • 250g Greek yoghurt
  • 1 garlic clove, crushed or grated
  • The juice of 1/2 lemon
  • Bunch of fresh mint, finely chopped

Halve your cucumber lengthwise and scoop out the seeds. Grate the flesh into a sieve, scatter with salt and then drain any excess water. Put the mint, yoghurt, garlic and lemon juice into a bowl and mix until it's perfectly combined. Add the cucumber and stir until everything comes together. Season to taste and then serve alongside our fried courgettes.
